Ask a restaurant owner about their POS and they'll talk about billing and reports. Ask the kitchen what matters, and the answer is usually one small grey box bolted near the pass: the KOT printer. It's the least glamorous piece of the system — and during a rush, arguably the most valuable.

What a KOT is

A Kitchen Order Ticket is a small printed slip that tells the kitchen exactly what to make. The moment an order is confirmed at the till, it prints automatically in the kitchen: items, quantities, modifiers, the table number, and the time. That's the whole idea — and everything good about it follows from removing humans from the message-carrying business.

Life without one

Kitchens without KOT printing run on some mix of shouted orders, handwritten chits, and waiters walking paper back and forth. Every step is a failure point:

  • Handwriting gets misread — "no onions" becomes extra onions, and the dish comes back.
  • Chits get lost or re-ordered, and a table's food arrives in the wrong sequence — or never.
  • Shouted orders vanish the moment two arrive at once.
  • Waiters spend the rush walking, which is exactly when the floor needs them most.
  • Nobody can prove anything. When a dish is wrong, the argument between floor and kitchen has no referee.

Each incident costs a remade plate, a delay, or an argument — all at the busiest, most expensive moment of the day.

What changes when KOTs print automatically

What a good KOT shows

A useful ticket answers every question before it's asked: the table number, each item with quantity, modifiers and notes ("less spicy", "no prawns"), the time the order fired, and who took it. When something goes wrong, the ticket settles it in seconds — the answer is on paper, not in anyone's memory.

KOTs quietly close a leakage hole

There's a harder benefit owners rarely say out loud: in a KOT system, nothing gets cooked without an order in the system, and every order in the system ends in a bill. Food leaving the kitchen with no matching bill — a classic source of restaurant leakage — becomes structurally difficult instead of merely forbidden. The ticket trail plus per-user tracking means day-end questions have answers.

The hardware is the easy part

A KOT printer is a standard thermal receipt printer — the same 80mm type at your counter — connected over the network so the till can reach it in the kitchen. Thermal means no ink or ribbons to run out mid-service. Two placement tips: mount it away from direct heat and steam (thermal paper darkens with heat), and put it where the person calling orders stands, not across the room. Larger kitchens sometimes run a second printer at the bar or the pass.

Getting it right from day one

  1. Position the printer at the pass, away from heat and oil.
  2. Set tickets to print on confirmation — no manual "send to kitchen" step to forget.
  3. Train the kitchen to work strictly in ticket order and spike completed tickets.
  4. Include modifiers and notes on every ticket — that's where remakes come from.
  5. After a week, compare remade-dish counts and service arguments with the month before.
